Baked apple cookies

Ingredients for 1 servings:

  • 250 g apples, freshly grated, prepared and weighed
  • 2 tsp lemon juice
  • 100 g butter, soft
  • 45 g vanilla sugar
  • 1 pinch of cinnamon
  • 1 egg(s)
  • 150 g flour
  • 1 tsp baking powder

Mix the grated apples with the lemon juice. Melt half the butter in a pan and melt the sugar, then add the apple pieces. Simmer over moderate heat until the juice has reduced to a syrupy consistency. Cream the remaining butter until fluffy and stir in the egg. Combine the flour, baking powder, and salt, then add it to the butter and egg mixture along with the apple mixture. Spoon 1 teaspoon of the mixture onto a baking sheet lined with parchment paper. Bake in a preheated oven at 175°C for 12-18 minutes.
