Ingredients for 4 servings:
- 1 kg asparagus, white or green
- Salt
- 1 pinch(s) of sugar
- 8 slices of Parma ham (or other air-dried)
- Pepper from the mill
- 50 g Parmesan, freshly grated
- ½ roll, dry
- 1 bunch parsley, flat
- 1 clove(s) garlic, chopped
- 1 lemon(s) – peel, untreated, grated
- 100 g butter
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel the asparagus and cook in lightly salted water with a pinch of sugar for about 15 minutes until tender. Meanwhile, bread the bread roll, chop the parsley, finely chop the garlic, and finely grate the lemon zest. Drain the asparagus and preheat the grill. Bundle the asparagus into eight portions, wrap each with a slice of ham, and place in a shallow ovenproof dish. Grind the pepper over the asparagus, scatter the Parmesan cheese, grated bread roll, parsley, garlic, and lemon zest over the asparagus bundles. Melt the butter and pour over the asparagus. Grill for about 5 minutes. Serve with fresh potatoes and a well-chilled white wine.
