Baked Banana in Rice Paper with Lime Sabayon

Ingredients
 

  • 2 Pc. Vanilla pods
  • 5 tbsp Honey
  • 4 Pc. Bananas
  • 5 leaf Rice paper
  • 6 tbsp Neutral fat
  • 350 ml Dessert wine
  • 60 g Sugar
  • 8 Pc. Egg yolk
  • 2 Pc. Squeezed organic limes

Instructions
 

  • Slice open the vanilla pod, mix the pulp with the honey. Remove the peel from the bananas and then brush with the vanilla honey.
  • Soak the rice paper sheets one after the other in a little water as instructed. Wrap a banana in each leaf. Heat the fat in a pan and fry the bananas over medium heat for about 2 minutes on each side. Take out of the pan and keep warm.
  • Put all the ingredients for the sabayon in a metal bowl and whip over the hot water bath to a cream.
