Baked beetroot

Ingredients for 6 servings:

  • 6 beetroot, cooked
  • 2 tbsp lemon juice
  • salt and pepper
  • 1 tbsp caraway seeds
  • 300 g sour cream
  • 300g mozzarella
  • 3 tbsp horseradish, freshly grated
  • 100 g cheese, grated
  • 2 tbsp flat-leaf parsley, chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Slice the beetroot and drizzle with lemon juice. Mix the sour cream with horseradish, caraway seeds, salt, and pepper. Slice the mozzarella. Arrange the beetroot and mozzarella slices in a casserole dish, spread with sour cream, and sprinkle with cheese. Bake in a preheated oven at 180°C for about 25 minutes. Serve with chopped parsley. As a side dish for meat and fish.
