Baked bell peppers

Ingredients for 4 servings:

  • 3 bell peppers, red, green and yellow
  • 1 zucchini
  • 2 tomatoes
  • 1 onion(s)
  • 1 garlic clove(s)
  • 3 tbsp olive oil
  • 200 g feta cheese
  • 200 g crème fraîche
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Wash the vegetables. Dice the peppers, tomatoes, onion, and garlic. Halve and slice the zucchini. Heat the oil in a pan and sauté the onion and garlic until translucent. Add the peppers and zucchini and fry. Add the tomatoes and season with salt and pepper. Cover and simmer for about 10 minutes. Dice the feta cheese and mix with the crème fraîche. Transfer the peppers to a baking dish and pour the feta mixture over them. Bake at 250°C for about 10-15 minutes.
