Baked broccoli in white wine cheese sauce

Ingredients for 4 servings:

  • 1 large broccoli
  • 1 tbsp butter
  • 2 egg yolks
  • 125 ml milk (3.5%)
  • 100 ml dry white wine (Riesling)
  • 1 pack Emmental cheese, grated
  • some salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Briefly bring the broccoli to a boil in a pot of salted water, remove from the heat, cover, and let stand for 5-7 minutes (depending on the firmness). Briefly bring the milk to a boil and season with salt and pepper. Remove from the heat and melt the butter. Whisk the egg yolks and wine over a pan of boiling water until a firm foam forms. Stir in the milk sauce and 3-4 tablespoons of the broccoli cooking water. Season with nutmeg. Then mix in two tablespoons of grated cheese. Place the broccoli in a baking dish and pour the sauce over it, sprinkle with the remaining cheese, and bake briefly in the oven at 180°C (convection oven).
