Peel and deseed the pumpkin, and cut into 1 cm thick slices. Then, combine the olive oil, salt, Provençal herbs, honey, and a finely chopped garlic clove in a cup. Combine the sauce and the pumpkin pieces in a large bowl and let stand for about 30 minutes. Arrange the pieces on a baking sheet and bake in the oven at 200 degrees Celsius for about 25 to 30 minutes.
