Ingredients for 4 servings:
- 1 white bread, Italian, (ciabatta, 500 g)
- 400 g cherry tomatoes
- 100 g arugula
- 3 tbsp pesto
- 2 tbsp olive oil
- Salt
- pepper
- 300g mozzarella
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Wash and quarter the tomatoes. Cut the bread into thick slices. Wash the arugula, pat dry, and finely chop. Mix with the pesto and oil. Place the bread slices on a baking sheet. Spread the herb mixture and tomatoes on top, season with salt and pepper. Cut the cheese into thin slices and arrange them on top. Bake in a preheated oven at 225 degrees Celsius on the middle rack for 5-10 minutes.
