Baked chicory with Brie

Ingredients for 2 servings:

  • 500 g chicory (chicory beets)
  • 200 g soft cheese or Brie
  • oil
  • salt and pepper

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 20 minutes

Wash the chicory and trim the brown ends of the beets as thinly as possible. This prevents the leaves from coming loose. Cut the beets lengthwise into three equal slices. Place on an oiled baking sheet, brush each slice with a little oil, and season with salt and pepper. Bake in the oven at 180°C (top/bottom heat) on the middle rack. After about 20 minutes, or when the slices are golden brown, turn them over and bake for another 10-15 minutes. Finally, sprinkle some soft cheese or Brie on each chicory slice and let it melt. Season with salt and pepper before serving.
