Baked butternut squash

Ingredients for 2 servings:

  • 1 butternut squash
  • some sunflower oil
  • 1 onion(s)
  • 1 bell pepper(s), red
  • 2 garlic cloves
  • 4 mushrooms
  • 1 small jar of pesto (preferably with parsley)
  • 100 g cheese, grated
  • pepper
  • cumin

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 15 minutes

Preheat oven to 200°C (top/bottom heat). Cut the butternut squash into 1-2 cm thick slices, peel, and remove the seeds. Brush both sides with oil and place on a baking sheet. Bake for about 20 minutes. In the meantime, peel, dice, and sauté the onions. Dice the bell pepper and add it, mince the garlic and add it, chop the mushrooms and add it, sauté everything, and season with pepper. Mix in the pesto and cheese. Turn the squash slices over and spread the mixture on top, then bake in the oven for another 15 minutes. Serve with a green salad.
