Baked eggplants

Ingredients for 2 servings:

  • 1 eggplant(s)
  • 400g hummus
  • 2 tomatoes
  • some garlic powder
  • some onion granules
  • some coriander or parsley

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

vegan, high-carb, low-fat

Cut the eggplant into 1.5-2 cm thick slices and place them on a baking sheet lined with parchment paper. Sprinkle each slice with garlic and onion flakes and top with a generous dollop of hummus. Finally, place a tomato slice on top of each eggplant. Bake in a preheated oven at 230°C (top/bottom heat) on the middle rack for about 13-15 minutes. The hummus will bubble when the slices are cooked. Once baked, serve while still hot, garnished with chopped herbs.
