Baked fennel

Ingredients for 2 servings:

  • 1 large fennel bulb(s)
  • 4 vine tomatoes, sliced
  • 50 g cheese, grated
  • 1 tbsp breadcrumbs
  • 20 g butter
  • salt and pepper
  • Paprika powder
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Clean the fennel bulb, halve it, or cut it into thick slices. Cook it in salted water with a little lemon juice and sugar, remove it, and drain. Chop the fennel greens and set aside. Place it in a greased baking dish and top with tomato slices. Season with salt and pepper. Sprinkle with cheese and sprinkle with breadcrumbs and butter flakes. Sprinkle with paprika. Bake briefly in a preheated oven at approximately 220°C until golden brown. Finally, sprinkle with the chopped fennel greens. Serve with sweet potato mash and pork tenderloin with walnut sauce.
