Baked feta with shrimp

Ingredients for 2 servings:

  • 2 packs of feta cheese, 150 – 200 g each
  • 1 medium-sized bell pepper(s)
  • 2 m.-large tomato(s)
  • 1 small onion(s)
  • 1 clove(s) garlic
  • 3 pepper, pickled, from the jar
  • 10 olives
  • 6 shrimp(s)
  • 4 tbsp olive oil
  • salt and pepper
  • chili powder
  • Parsley
  • oregano
  • 1 pinch(s) of sugar

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Quick and easy

Cut the tomatoes, bell peppers, olives, chili peppers, and onion into equal-sized cubes. Finely chop the garlic. Finely chop the herbs (if they are fresh). First, drizzle the shrimp with a little olive oil and season with salt, pepper, and parsley. Set aside for a moment and let it soak in. Now sauté the onion in oil and then add the remaining diced ingredients. Sauté everything briefly and after about 5 minutes, add the garlic and herbs and season to taste. Remove the pan from the heat. Place the feta cheese on two sufficiently large pieces of aluminum foil and drizzle with olive oil. Arrange the prepared vegetables on top. Place the shrimp on top of the vegetables and form the aluminum foil into a parcel. Place the parcels in the preheated oven (180 degrees fan-assisted) for 20 minutes and then serve hot. Serve with ciabatta or a baguette.
