Baked feta with tomatoes and olives

Ingredients for 4 servings:

  • 3 tbsp olive oil
  • 750 g cherry tomatoes
  • 1 jar olives, black
  • 3 onions
  • 2 garlic cloves
  • 600 g feta cheese
  • some basil leaves for garnish
  • salt and pepper
  • 1 baguette(s), (garlic baguette)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Preheat the oven to 220°C (top and bottom heat). Brush a large baking dish (approx. 20×30 cm) with 1/2 tbsp of oil. Cut the tomatoes into approximately 1 cm thick slices. Thinly slice the olives. Peel the onions and slice them into thin rings. Peel and finely chop the garlic. Alternate the tomatoes, olives, and onions in the baking dish, season with garlic, salt, and pepper. Drain the feta, divide it into 4 portions, place it on top of the vegetables, and drizzle with the remaining olive oil. Bake in the oven on the middle rack for approximately 15-20 minutes, until the cheese is lightly browned. Wash the basil leaves. Remove the feta from the oven and garnish with basil. Serve with the baguette.
