Low-carb bread from the microwave

Ingredients for 1 servings:

  • 5 tbsp almond flour
  • 2 tbsp spelt bran
  • 2 tbsp flaxseed
  • 1 tbsp oil
  • 2 m.-sized eggs
  • 1 tsp baking powder
  • Sunflower seeds, sesame, pumpkin seeds, as desired
  • salt and pepper
  • Spice(s), of your choice

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 7 minutes

Combine all dry ingredients in a microwave-safe dish (I always use the bottom of my lunchbox, so it fits later). Add the eggs and oil and mix with a fork. Add seeds, salt, pepper, and seasonings to taste. Microwave on high for 1.5-2 minutes (depending on the microwave’s power). Remove, cut crosswise, and let cool. My current favorite topping: herb curd cheese, topped with zucchini, kohlrabi, and radish slices.
