Baked garlic mushrooms

Ingredients for 4 servings:

  • 2 bulbs of garlic
  • 4 tbsp olive oil, very good
  • 350 g mushrooms, e.g. button mushrooms, oyster mushrooms or chanterelles
  • 2 tbsp parsley, chopped
  • 8 spring onions, cut into 2-3 cm long pieces.
  • salt and pepper

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Mushrooms with aglio and chipollina

Preheat oven to 180 degrees Celsius. Press the garlic bulbs apart slightly. Trim the tips from each clove. Place in a small baking dish, season with salt and pepper, and drizzle with oil. Bake in the oven for about 1 hour. This will tenderize the garlic and give it a very mild aroma. Allow to cool. Then press the cloves out of their skins into a bowl. Pour the oil from the baking dish into a pan (adding a few more drops if necessary) and heat. Sauté the mushrooms for about 4 minutes. Add the garlic, parsley, and spring onions and fry for about 5 minutes, stirring constantly. Season with salt and pepper and serve immediately.
