Baked gnocchi with herb tomato sauce and mushrooms

Ingredients for 3 servings:

  • 300 g gnocchi
  • 2 onions
  • 10 m.-sized mushrooms
  • 10 cherry tomatoes
  • some thyme
  • some olive oil
  • 100 ml vegetable stock
  • 150 g tomato paste
  • 200 g herb cream cheese
  • some milk
  • some salt
  • some pepper
  • 100 g cheese, grated

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Peel the onions and slice them. Clean and slice the mushrooms. Wash and halve the tomatoes. Heat the olive oil in a pan and fry the gnocchi until golden brown. Place the gnocchi in a baking dish. Fry the onions and mushrooms in the pan and season with thyme. Add the tomatoes and fry briefly. Pour everything into the baking dish over the gnocchi. Bring the vegetable stock to a boil in the pan, stir in the tomato paste and cream cheese. Add milk until the desired consistency is reached. Season with salt and pepper, pour over the gnocchi and sprinkle with grated cheese. Bake in the oven at 180°C (convection oven) for about 30 minutes. Serve with salad.
