Green Potatoes – Baked potatoes with spinach and mushrooms

Ingredients for 2 servings:

  • 2 large potatoes, alternatively 4 small ones
  • 300 g leaf spinach, frozen
  • 10 mushrooms, brown
  • 4 slices of cheese (strong variety)
  • 1 onion(s), diced
  • 4 tsp, heaped cream cheese (e.g. Bressot)
  • 10 cherry tomatoes
  • salt and pepper
  • some nutmeg

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes

Cook the potatoes until tender, then cut a slit in the top. Meanwhile, squeeze the spinach well. Sauté the mushrooms, onion, and cherry tomatoes in a pan. Add the spinach and season with salt, pepper, and nutmeg (tip: garlic also goes well with it). Add the cream cheese and stuff the slitted potato with the mixture. Place the cheese on top. Bake in a preheated oven at 200°C (top heat) until golden brown. If you don’t need to make it vegetarian, you can also add diced ham.
