Baked goat cheese

Ingredients for 4 servings:

  • 450 g mixed salad (rocket, radicchio, chicory)
  • 2 tomatoes
  • 1 sprig(s) rosemary
  • 8 small cheeses (goat cheese)
  • 6 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • salt and pepper
  • 1 bunch of chives

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Trim, wash, and pat dry the lettuce. Cut the tomatoes into thin strips. Strip the rosemary needles from the stems. Preheat the oven to 200°C. Divide the goat cheese among four ovenproof plates. Drizzle each with ½ tablespoon of oil and sprinkle with rosemary. Bake for about 7 minutes. Mix the remaining olive oil, balsamic vinegar, salt, and pepper to make a marinade. Arrange the lettuce and tomato strips around the goat cheese and drizzle with the marinade. Finely chop the chives and scatter over the lettuce.
