Baked goat cheese on lamb's lettuce

Ingredients for 4 servings:

  • 4 servings of lamb’s lettuce
  • 4 slice(s) cheese, (honey goat cheese)
  • 4 slice(s) bread(s) (wholemeal bread)
  • 1 beetroot, cooked
  • Vinegar
  • oil
  • salt and pepper
  • 4 tbsp honey
  • 4 tbsp walnuts

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the lamb’s lettuce. Make a vinaigrette with 2 parts oil and 1 part vinegar and season with salt, pepper, and honey for a tangy-sweet taste. Place the honey goat cheese on each slice of whole-grain bread and bake in the oven at 180°C for about 10 minutes. It’s ready when it just starts to brown. Caramelize the walnuts in a pan with the honey. I cut little stars out of the beetroot to match my menu, but you can also simply cut it into small wedges, cubes, or whatever you like. Divide the lamb’s lettuce among serving plates and place the warm goat cheese sandwiches on top. Garnish with honey walnuts and beetroot and drizzle the salad with the vinaigrette.
