Baked green asparagus

Ingredients for 3 servings:

  • 750 g asparagus, green
  • 3 slices of bacon
  • 50 g Parmesan, freshly grated
  • 1 cup whipped cream

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

simple, tasty, quick

Trim the bottom end of the asparagus, so there’s no need to peel it. Green asparagus is always tender. You can add the bottom ends to the cooking water to make a soup later. I freeze the stock in portions. Boil for 10 minutes. Drain. Divide the asparagus into 3 or 4 portions and wrap each one with a slice of bacon, tying it in a knot. Place in a baking dish. Mix the Parmesan cheese with the cream and spread the cream cheese over the asparagus. Bake in a very hot preheated oven or under the grill on the top rack until the cheese is golden brown.
