Braised leek à la Gabi

Ingredients for 4 servings:

  • 2 stalk(s) leek, thick, halved
  • some butter
  • 400 ml chicken broth
  • Salt
  • 2 slices cooked ham, slightly thicker sliced, diced
  • ½ cup Parmesan cheese, freshly grated
  • n. B. Butter flakes

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Heat butter in a large pan, fry the leek halves cut-side down until lightly browned. Add chicken stock, season with salt, and simmer over low heat for about 10 minutes, until the leek is tender and the stock has reduced by about half. Transfer the leek to a buttered casserole dish, pour over the reduced stock, top with ham cubes, sprinkle with Parmesan cheese, and garnish with butter flakes. Roast under the preheated grill until the ham is crispy and the cheese has melted.
