simple and delicious

Bring the water to a boil with the cloves, bay leaves, juniper berries, salt, and white wine. Add the mussels and cook for about 10 minutes, until they have opened. Do not use mussels that do not open on their own! Remove the mussels from their shells and place them in a baking dish. Melt the butter in a saucepan over medium heat. Stir in the flour and milk, stirring constantly, until the sauce reaches the right consistency. Stir in the egg yolk, tomato paste, and seasonings to taste. Pour the sauce over the mussels and sprinkle with the cheese. Place the baking dish in the oven at 175 degrees Celsius (350 degrees Fahrenheit) until the cheese is lightly browned.
