Shrimp with sheep's cheese

Ingredients for 4 servings:

  • 600 g shrimp(s), medium-sized without shell
  • 1 bunch of spring onions
  • 2 cloves garlic
  • 300 g tomatoes, nice and ripe
  • 4 tbsp olive oil
  • 1 bay leaf
  • 100 ml white wine
  • salt and pepper
  • 200 g sheep’s cheese
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely dice the onions and garlic. Blanch the tomatoes, peel them, remove the stems, and dice them, or simply remove the tomatoes from the can (they must be drained first). Heat the oil in a pan and sauté the onions and garlic until translucent. Add the bay leaf and tomatoes and sauté for 5 minutes. Season the sauce with salt, a pinch of sugar, and pepper. Cover and simmer for 10 minutes. Spread the shrimp in the sauce and cook for 4 minutes. Transfer everything to an ovenproof dish and sprinkle with the crumbled feta cheese. Bake in the oven at 200°C (400°F) and serve with baguette. It’s also easy to make ahead. All you have to do is bake it before serving. If desired, you can also reheat the bread at the same time.
