Ingredients for 4 servings:
- 1.2 kg potatoes
- 1 bell pepper(s), red
- 1 bell pepper(s), yellow
- 1 bell pepper(s), green
- 5 small onions
- some oil
- salt and pepper
- Paprika powder, sweet
- Garlic
- Thyme
- rosemary
Instructions
Working time approx. 35 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 15 minutes
Peel the potatoes and cut into approximately 2×2 cm cubes. Cut the bell peppers into bite-sized pieces, peel and halve the onions. Combine all ingredients in a large bowl and drizzle with no more than 1 tablespoon of oil. Season with pepper, salt, sweet paprika, garlic, thyme, and rosemary. Preheat oven to 200 degrees Celsius. Line a baking sheet with parchment paper and spread all ingredients on it. Bake in the oven for about 40 minutes, turning halfway through.
