Baked potatoes with bacon and fig cheese dip

Ingredients for 2 servings:

  • 4 large potatoes
  • 8 slices of bacon
  • 300 g goat’s cheese
  • 1 fig(s), ripe
  • 2 shallots
  • 2 tsp olive oil

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 5 minutes

Clean the potatoes thoroughly and brush with olive oil, season with salt, place in a baking dish, and bake in a preheated oven at 175 degrees Celsius (350 degrees Fahrenheit) for 45 minutes. Fry the bacon in hot oil until crispy and drain off the fat. Quarter each slice. Sauté the finely chopped shallots in olive oil. Mix the sautéed shallots and the flesh of a ripe fig with the goat cheese and a few drops of olive oil to make a dip. Season the dip with salt and pepper. Cut open the cooked baked potatoes and pour in the dip, then arrange the ham slices on top. Serve warm.
