Baked potatoes with chili

Ingredients for 4 servings:

  • 500 g potatoes, small, new, washed
  • 150 ml vegetable oil
  • 1 tsp chili powder
  • ½ tsp caraway seeds
  • 1 tsp salt
  • 1 tsp basil, freshly chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

First, cook the potatoes in a pot of boiling water for 10 minutes. Then drain. Add a little vegetable oil to a shallow roasting pan and heat in a preheated oven at 200°C for about 10 minutes. Add the potatoes and brush with the hot oil. Mix the chili powder, caraway seeds, and salt in a small bowl and sprinkle over the potatoes, turning the potatoes until they are seasoned all over. Add the remaining oil to the roasting pan and roast the potatoes for another 15 minutes, until cooked through. Remove the potatoes from the oil, drain thoroughly, and place in a bowl. Garnish with basil and serve.
