Ingredients for 4 servings:
- 30 g flour
- 4 eggs
- ½ liter of milk
- 1 pinch of salt
- 5 tbsp rapeseed oil for frying
- 40 g leaf spinach
- 1 garlic clove(s)
- 2 ½ tbsp rapeseed oil
- salt and pepper
- 100 g ham, diced
- 250g mozzarella
- some butter
Instructions
Working time approx. 1 hour; Total time approx. 1 hour
For the batter, mix the flour, eggs, and milk into a smooth batter, add a little salt, and let it rest for about 30 minutes. In the meantime, for the filling, wash and trim the spinach. Peel and finely chop the garlic clove. Heat a tablespoon of oil in a pan and sauté the spinach. Season with salt, pepper, and the chopped garlic. Slice the mozzarella. Then dice half of the mozzarella slices. Heat the rapeseed oil in a pan and use the batter to make eight pancakes. Top the pancakes with the spinach and sprinkle with the ham and mozzarella cubes. Roll up the filled pancakes and place them side by side in a lightly buttered baking dish. Top with mozzarella slices and bake briefly in a preheated oven at 200°C until the mozzarella melts slightly.
