Ingredients for 1 servings:
- 1 can of tuna
- 1 onion(s)
- 1 handful of parsley
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 4 eggs
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Preheat the oven to 180°C fan/convection oven. Drain the tuna juices from the tuna can and add the tuna to the baking dish. Peel and dice the onion, wash and chop the parsley, and add both to the tuna. Season with olive oil, lemon juice, salt, and pepper, and mix thoroughly. Carefully add the eggs, one at a time, to the tuna mixture. Bake in the hot oven for approximately 15-20 minutes, until the eggs have reached the desired consistency. Season with salt and pepper and serve.
