Ingredients for 2 servings:
- 2 handfuls of fresh, cleaned spinach leaves
- 3 m.-sized eggs
- 150 g cheese, freshly grated
- 100 g cream cheese
- 4 slices of smoked salmon
- 2 spring onions, cut into rings
- 1 pinch of chili
- e.g. salt and pepper
- some oil for frying
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Egg omelet with cream cheese
Briefly sauté the spinach in a pan and let it cool. Grate the cheese into a bowl. Mix it with the eggs and season with salt, pepper, and chili (about a pinch of each). Then fold in the spinach. Cook two omelets in a little oil. In the meantime, mix the cream cheese with the onion rings, salt, and pepper. Spread this mixture on the lukewarm omelets and top with the smoked salmon. Now roll everything up tightly and enjoy. Tips: You can also use other herbs, such as cress, chives, or parsley. Either eat it right away or wrap it in cling film and store it in the refrigerator.
