Baked zucchini on tomatoes

Ingredients for 4 servings:

  • 2 onions
  • 750 g tomatoes
  • 1 bunch of basil
  • 2 large zucchini
  • 100 g butter
  • salt and pepper
  • 3 tbsp breadcrumbs
  • Herbs of your choice
  • 25 g Parmesan, freshly grated
  • 5 tbsp cream

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and dice the onions. Wash and slice the tomatoes. Lightly fry both ingredients in a pan with about 50g of butter. Season with basil, salt, and pepper, and place in a shallow baking dish. Clean the zucchini, halve it lengthwise, and place it cut-side up on the tomato and onion mixture. Mix the remaining butter, breadcrumbs, Parmesan cheese, cream, and herbs into a paste and spread it on the zucchini. Bake in a preheated oven at 225°C (gas mark 4) for about 25 to 30 minutes, until the crust is golden brown. This goes well with baguette, ciabatta, or rice.
