Balinese baked rice

Ingredients for 4 servings:

  • 500 g shrimp(s)
  • 2 tsp oil
  • 2 eggs
  • salt and pepper
  • 2 onions finely diced
  • 2 garlic cloves, squeezed
  • 3 tbsp oil
  • ¼ tsp shrimp paste
  • 125 g roast beef cut into fine strips
  • 300 g rice (long grain rice, cooked)
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp sambal oelek
  • 1 tbsp tomato paste
  • 6 spring onions, finely chopped
  • 1 chicken breast fillet(s) (cooked double fillet cut into thin strips)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Beat the eggs and season with salt and pepper. Cook the eggs into an omelet in a non-stick pan with 2 teaspoons of oil. Roll up and let cool. Cut into strips. Chop the shrimp. Heat 3 tablespoons of oil in a pan or wok. Sauté the onion and garlic until translucent. Add the shrimp and beef and cook. Add the chicken and rice and heat through. Mix together the soy sauce, fish sauce, tomato paste, and spring onions, then add to the rice and mix well. Garnish the rice with the omelet strips while hot and serve.
