Ingredients for 1 servings:
- 1 kg onion(s), red
- some butter
- 125 ml balsamic vinegar
- 3 tbsp sugar, brown or cane sugar
- e.g. salt and pepper
- some thyme sprigs, fresh
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour
Simple, quick, with fried food or on cheese
Cooking time: about 50 minutes. Finely dice the onions. Sauté the diced onions in a pan or saucepan with a generous knob of butter. Stir the onions over low heat until translucent; they shouldn’t brown. Add a few sprigs of thyme. Alternatively, you can add dried, shredded thyme. Let everything become translucent, about 20 minutes. Then remove the thyme sprigs and stir in the balsamic vinegar and sugar. You can use regular sugar instead of brown sugar or cane sugar. Season everything with salt and pepper and stir over low heat until the balsamic vinegar has reduced and the onions have become slightly dry. Pour into rinsed screw-top jars and turn the jars upside down for a few minutes. This makes 2 jars. Tastes great with grilled meat, on cheese, or as a side dish. In the photo, I used frozen onions. They are white and unfortunately don’t look as good as red onions afterwards. But this doesn’t detract from the flavor.
