Balsamic reduction with apple

Ingredients for 1 servings:

  • 100 g powdered sugar
  • 200 ml balsamic vinegar
  • 100 ml port wine
  • 1 pinch(s) of cayenne pepper
  • 1 pinch of salt
  • ¼ apple

Instructions

Heat the icing sugar with a dash of balsamic vinegar in a saucepan until it caramelizes. Then remove from the heat briefly and deglaze with red wine. Dissolve the sugar again. Bring back to a boil with the remaining balsamic vinegar and port wine until the mixture has reduced to about 100 ml. Dice the apple and add it to the boiling liquid after about 10 minutes. Finally, let it cool and pour it into a tightly sealed jar. This way, the sauce can be kept in the refrigerator for a long time. It can be added drop by drop to salads and spreads. There are certainly numerous other uses for it.
