Ingredients for 6 servings:

  • 800 g okra, frozen (Bamia)
  • 350 g onion(s)
  • 6 garlic cloves
  • 500 g vine tomatoes
  • 85 g tomato paste
  • 5 ml pomegranate molasses or other sweetener
  • 1 tbsp olive oil
  • ½ tsp Lebanese spice mix (7 spices)
  • 1 tsp coriander
  • 250 ml water
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Stew from Lebanon

First, prepare the vegetables. Dice the onions and garlic, and chop the tomatoes. Heat the olive oil in a saucepan and add the onions and garlic. Sauté until the onions are translucent. Then add the okra and mix, then the tomatoes. Cover and simmer for about 7 minutes. Then add all the remaining ingredients to the pan, stir, and simmer over medium heat for 25 minutes. When everything is tender, serve with rice or a rice and vermicelli mixture.
