Ingredients for 2 servings:

  • 120 g Chinese egg noodles, curly, dried
  • 250 ml water
  • 4 g beef broth, instant
  • 6 small onions, red
  • 2 medium-sized garlic cloves, fresh
  • 1 small carrot(s)
  • 2 leaves of white cabbage
  • 1 head of pak choi (mustard greens), young
  • 2 Pepper, red, long, mild to medium hot
  • 1 spring onion(s)
  • 6 tbsp sunflower oil
  • 1 tbsp Ketjap Manis (sweet soy sauce, kecap manis)
  • 2 tbsp soy sauce, light
  • 3 tbsp sweet and sour chili sauce (Saos Sambal Cabe Besar 1, see notes)
  • 2 tbsp orange juice
  • 1 tsp white sugar
  • 20 g roasted beans (kacang kapri) (alternatively large peanuts)
  • n. B. flowers and leaves

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Spicy Chinese egg noodles stir-fried with vegetables. A particularly delicious side dish.

Wash the vegetables and fruit. Trim both ends of the small onions and garlic cloves, peel, and coarsely chop. Peel and coarsely grate the carrot. Remove the center stalk of the white cabbage and cut crosswise into approximately 5 mm wide pieces, then chop the leaves into approximately 3 x 3 cm pieces. Keep both separate. Remove the leaves from the mustard greens at the stalk. Treat the center stalk and leaves as for the white cabbage. Split the chili peppers lengthwise, remove the seeds, and cut the empty pods crosswise into thin strands. Use only the white to light green part of the spring onion. Cut these into approximately 8 mm wide slices. Bring the water to a boil, dissolve the instant beef broth, and cook the noodles in the broth for 5 minutes. Strain and leave in the sieve, reserving half a cup of broth. Dissolve the sauce ingredients in the water. Heat the sunflower oil in a sufficiently large pan (28 cm or more). Sauté the onion, garlic, and carrot pieces until translucent. Add the stalks of both types of cabbage and stir-fry for 1 minute. Add the chili pepper strands and stir-fry for another minute. Mix in the finely chopped spring onion and stir-fry for 1 minute. Mix in the pieces of white cabbage leaves and stir-fry for 1 minute. Trim the noodles slightly with scissors, then add them to the vegetables and mix with the fried vegetables using two spatulas. Finally, add the sauce and the mustard greens and simmer with the lid on for 2 minutes. Transfer to a serving bowl, garnish, and serve warm as a side dish.
