Ingredients for 2 servings:
- 8 g yeast
- 5 g salt
- 100 g sour cream
- 45 g juice (banana juice)
- 300 g flour, smooth
- 1 small banana(s)
- 20 g syrup (banana syrup)
- 2 tbsp powdered sugar
- 1 tbsp soy flour, (alternatively one egg, instead 20g sour cream)
- 1 tsp cinnamon
- possibly walnuts, caramel candies, chocolate, roughly chopped
- 1 tbsp milk
- 1 tsp butter-vanilla flavoring
- 1 tbsp butter

Mix the yeast, salt, and sour cream and refrigerate for 30 minutes. Mash the banana in a large bowl with a hand blender, place on a kitchen scale, add the flour and cinnamon, and mix roughly. Place the yeast mixture on a kitchen scale and add the required amounts of banana juice, banana syrup, and sugar (it tastes good without sugar too, but not as sweet). Stir in the soy flour and pour it into the flour bowl. Mix roughly, adding a handful of walnuts, chocolate, or caramel candies if desired. Knead the dough, adding more flour if necessary, until it forms an elastic ball. Cover with a damp cloth and let rest at room temperature for 30 minutes. Place the dough on a lightly floured surface and use a knife to cut it lengthwise into three pieces and then crosswise to make six dough balls. Loosely twist each piece of dough into a strand between your hands, braid it, place it on a plate lined with baking paper, and cover with a damp cloth. Place a bowl of boiling water on the floor of the oven and let the dough rise for 45-60 minutes in a closed, unheated oven on the oven rack. At the end of the rising time, remove the plaited loaf from the oven and preheat it to 200°C (400°F) top/bottom heat. Place the butter in a small bowl in the oven and let it melt. Meanwhile, mix the milk and flavoring and add the melted butter. Brush the plaited loaf with the mixture and enclose it in the oven. After 20 minutes, reduce the temperature to 180°C (350°F), cover with baking paper depending on the desired browning, and bake for about 30 minutes. Once cooled, sprinkle with melted chocolate, if desired.
