Ingredients for 1 servings:

  • 50 g brown sugar
  • 1 egg(s)
  • 80 ml oil, neutral (e.g. sunflower oil)
  • 3 banana(s), ripe
  • 200 g spelt flour
  • 3 tsp baking powder
  • 1 pinch of cinnamon, or more if you like
  • 1 pack of blueberries (small pack)
  • 10 walnuts, optional
  • 50 g dark chocolate chips, optional
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

simple, quick, super tasty

Preheat the oven to 180°C (top/bottom heat 160°C fan/convection oven). Grease a loaf pan well. Peel the bananas and mash them with a fork in a bowl. Whisk the oil with the brown sugar (I use coconut blossom sugar) and the egg. Combine the flour, baking powder, and cinnamon and stir into the oil and egg mixture. Add the banana puree and mix. If you like, you can add dark chocolate chips at this point. Chop the walnuts. Carefully fold the blueberries and walnuts into the batter mixture. Pour the batter into the pan. Bake the bread in the preheated oven for about 45-55 minutes. Tip: If you have a leftover banana or half a banana, split it lengthwise and lightly press it into your batter.
