Banana bread with apples and dates

Ingredients for 1 servings:

  • 50 g pecans, chopped
  • 3 bananas
  • 60 ml vegetable oil
  • 50 ml milk or plant-based drink
  • 60 g dates
  • 250 g wholemeal spelt flour
  • 1 pinch of salt
  • 1 packet of baking powder
  • 1 apple, finely diced
  • 2 tsp cinnamon
  • 50 g chocolate chips, optional
  • Fat and flour for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Preheat oven to 180°C (350°F). For a more intense flavor, toast the pecans in a pan over low heat without fat. This can also be done in the oven. Place the bananas, vegetable oil, milk, and dates in a blender and blend well. Then add the flour, a pinch of salt, the baking powder, the toasted nuts, the diced apple, and the cinnamon, and mix everything together. If desired, you can stir in chocolate chips at this point. Grease a loaf pan and dust it with flour. Pour the batter into the pan. Bake in the preheated oven for approximately 45-50 minutes.
