Ingredients for 1 servings:

  • 110 g butter, soft
  • 200 g fructose, or diabetic sugar
  • 1 packet of vanilla sugar or vanilla flavoring
  • 2 large eggs
  • 2 tbsp water, boiling
  • 300 g Flour (wholemeal spelled flour)
  • 2 tsp baking powder
  • 1 pinch of salt
  • 1 tsp ginger powder
  • 100 g hazelnuts
  • 1 bar of chocolate (100 g diet chocolate), dark, chopped
  • 2 large bananas
  • Butter and breadcrumbs for the mold for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 30 minutes

Grease and crumble a cake tin. Cream together the butter, sugar, vanilla sugar or flavoring, and eggs until very light and fluffy, while whisking in the water. Mix the flour, baking powder, ginger, salt, hazelnuts, and chocolate and stir in. Mash the bananas with a fork and fold them into the batter. Pour into the prepared tin and smooth the surface. Bake in a preheated oven at 180°C (top/bottom heat) for about 75 minutes. Test with a skewer if the cake is done. Turn the cake out onto a wire rack and let it cool.
