Banana coconut chili soup

Ingredients for 4 servings:

  • 2 spring onions
  • 1 garlic clove(s)
  • 200 ml coconut milk
  • 400 ml vegetable stock
  • salt and pepper
  • Sugar
  • 1 banana(s) (the riper, the more the desired banana flavor comes through)
  • 2 chili peppers, more or less depending on the spiciness
  • 1 tbsp oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Warms you up from the inside!

Thinly slice the spring onion, garlic clove, chilies, and banana. Heat the oil in a pan and briefly fry the onion, garlic, and chilies. Pour in the coconut milk and vegetable stock, bring the soup to a boil, and season with pepper, salt, and sugar. Simmer the soup for 5 minutes. Then add the bananas and puree the soup. Heat the soup again briefly and serve garnished with banana slices, if desired.
