Ingredients for 4 servings:
- 2 spring onions
- 1 garlic clove(s)
- 200 ml coconut milk
- 400 ml vegetable stock
- salt and pepper
- Sugar
- 1 banana(s) (the riper, the more the desired banana flavor comes through)
- 2 chili peppers, more or less depending on the spiciness
- 1 tbsp oil

Warms you up from the inside!
Thinly slice the spring onion, garlic clove, chilies, and banana. Heat the oil in a pan and briefly fry the onion, garlic, and chilies. Pour in the coconut milk and vegetable stock, bring the soup to a boil, and season with pepper, salt, and sugar. Simmer the soup for 5 minutes. Then add the bananas and puree the soup. Heat the soup again briefly and serve garnished with banana slices, if desired.
