Ingredients for 1 servings:
- 100 g flour
- 25 g cornstarch
- 3 tsp, leveled baking powder
- 125 g sugar
- 1 packet of vanilla sugar
- 1 pinch of salt
- 3 eggs, size M
- 125 g butter, soft
- 500 g low-fat curd cheese
- 500 g mascarpone
- 8 tbsp lemon juice
- 150 g sugar
- 200 g confectionery (After Eight)
- 5 banana(s), ripe
- 1 banana(s)
- e.g. mint, fresh
Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes
Summer cake
Mix and sift the flour, cornstarch, and baking powder. Add the remaining ingredients for the base and mix with a mixer for about two minutes. Bake in a 26cm springform pan lined with baking paper in a preheated oven at 160°C (320°F) for about 30 minutes. Allow the base to cool. For the cream, mix the quark, mascarpone, 4 tablespoons of lemon juice, and sugar. Roughly chop all but 6 After Eight bars and stir into the quark mixture. Peel the bananas, halve them lengthwise, and drizzle with the remaining lemon juice. Dab off any excess liquid. Arrange the bananas on the base and spread the quark mixture on top. Chill for about two hours. Decorate the cake with the banana, the remaining After Eight bars, and the mint.
