- 1 banana(s), ripe
- 2 eggs
- some oil
- possibly sweetener

Working time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 10 minutes
Low in calories, taste almost like pancakes, with only 2 ingredients!
For one serving, mash a ripe banana with a fork. Add the two eggs and mix the mixture into a smooth batter. If you prefer it sweeter, add a little liquid sweetener or sugar. The batter is pan-fried for a few minutes, like pancakes, until golden brown. This makes about two pancakes, with no flour or sugar. I was pleasantly surprised by the result. It doesn’t taste too much like eggs, but much more like banana.
