Banana waffles made from wholemeal spelt flour

Ingredients for 1 servings:

  • 200 g wholemeal spelt flour
  • 1 large banana(s), very ripe (approx. 125 g net)
  • ½ tsp vanilla, ground, real
  • 12 g cream of tartar baking powder (equivalent to approx. 2 heaped tsp)
  • 125 ml still mineral water
  • 125 ml oat milk (oat drink)
  • 1 tbsp sunflower oil
  • 1 pinch of sea salt
  • n. B. Sunflower oil for the waffle iron

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Mash the banana with a fork until finely ground, then blend with the remaining ingredients using a mixer until smooth. Heat up the waffle iron and grease it with a little sunflower oil (I use a pastry brush). Pour about 4 tablespoons of batter into the waffle iron for each waffle and bake until golden brown. You may need to re-grease the iron after each waffle. My heart-shaped waffle iron makes enough batter for exactly 5 waffles. The waffles are delicious on their own or with sweet toppings of your choice. They’re also delicious cold or the next day! Info: The natural sweetness of the banana and the natural sweetness of the oat milk means no extra sugar is needed. This makes the waffles ideal for little eaters or as a sweet breakfast.
