Ingredients for 8 servings:

  • 1 kg quark (low-fat quark)
  • 6 eggs
  • 1 lemon(s), grated peel + juice with flesh
  • 250 g cane sugar
  • ½ tsp vanilla (bourbon), ground. OR
  • 2 bags of vanilla sugar (Bourbon)
  • ¼ tsp salt
  • 10 tbsp brown rice, approx. 160 g, ground, dried
  • 100 g raisins

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix all ingredients and pour into a 26 cm diameter springform pan lined with baking paper. Bake at 150°C fan/convection oven without preheating for approx. 80 minutes, normally approx. 20-30°C longer, with preheating bake for 60-70 minutes. Leave in the switched off oven for approx. 60 minutes. Allow to cool before slicing. Note: Brown rice is available in long grain and short grain rice. Rice flour, like millet flour, only reacts when heated, and even then somewhat sluggishly. It absorbs liquid more quickly. This is why the finished baked goods do not rise very much and are quite dense. Like millet flour, rice flour also remains unbound. However, this can be improved somewhat by drying (roasting) the grain or flour. I like to use this property of rice flour when I want to use a lot of liquid.
