Ingredients for 1 servings:
- 80 g butter
- 300 g rhubarb
- 2 eggs
- 180 g sugar
- 1 packet of vanilla sugar
- 150 g flour
- 1 tsp baking powder
- Breadcrumbs for the mold
- possibly powdered sugar for dusting

First, melt the butter and let it cool, then preheat the oven to 180°C. Peel the rhubarb and cut it into pieces. Grease a springform pan with the base and sprinkle with breadcrumbs. Beat the eggs until frothy, gradually adding the sugar and vanilla sugar until a thick foam forms. Add the flour, baking powder, and butter and gently fold in. Pour the batter into the pan. Carefully place the rhubarb on top (it will sink during baking) and bake in the oven! Bake for approximately 30 minutes at 180°C.
