After 3 days
- Remove the salt from the Barbarie duck breast, rub off the salt, rub in with coarse pepper, wrap in a linen cloth and store in the vegetable compartment of the refrigerator for 3 weeks.
- It's going to be 4 weeks for me because I'm going to the hospital for a week. However, 3 weeks of maturation are sufficient. 4 weeks won't let the ham spoil. :))
- Step 3 on May 16. until then.
