Barbecue sauce with a great coffee note

Ingredients for 12 servings:

  • 3 stalk(s) Celery
  • 3 onions
  • 6 garlic cloves
  • 3 tbsp butter
  • 50 g brown sugar
  • 50 ml Worcestershire sauce
  • 300 ml tomato ketchup
  • 2 tsp cayenne pepper
  • 2 tsp, heaped instant coffee powder
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes

Dice the celery, garlic, and onions and sauté them in butter in a saucepan. Add the sugar and let it melt. Add all the other ingredients and simmer (covered!) for a good hour. Purée the sauce very finely; if it’s too thin, let it simmer briefly. The sauce freezes very well; if kept cool, it will keep for a short barbecue season.
