Bärbel's potato salad

Ingredients for 8 servings:

  • 1 kg potatoes (approx. 13 medium-sized)
  • 400 g meat salad
  • 100 g mayonnaise
  • 2 small onions
  • 100 g cucumber(s), sour
  • 70 ml cucumber juice
  • 3 tsp mustard
  • Salt
  • pepper

Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes

a tasty salad with guaranteed success

Dice the boiled potatoes, preferably cooked the day before, and place them in a bowl. Finely dice the onions and cucumbers and mix with the remaining ingredients. Carefully fold everything into the potatoes. Season with salt and pepper if desired. Depending on your desired spiciness, choose the quality of mustard. Refrigerate the salad and let it sit for 2-3 hours. Better yet, overnight! This salad never “survives” at our barbecues.
