Basic recipe for lassi

Ingredients for 1 servings:

  • 2 parts water
  • 1 part natural yogurt
  • Lemon juice, to taste

Take two parts water and mix with one part natural yogurt until a frothy drink forms. Add a little fresh lemon juice, if desired. Keep the ingredients at room temperature. This basic lassi mix can be refined with either salt or sweet. Spicy lassis can be made with, for example, roasted cumin, or two fenugreek seeds ground in a mortar, or fresh chervil, etc. A few grains of salt are a must. Elderflower Lassi: Mix the basic mix to taste, one to two tablespoons of elderflower syrup, the pulp of half a lemon, and a pinch of sugar. Blend everything in a blender until the mixture foams. A creamier version is created by using fresh milk instead of water for the basic mix.
